Makes 12
- energy-balls75g raisins
- 50g unsalted nuts – almonds or hazelnuts
- 50g butter – melted
- 25g shredded coconut
Blend raisins and nuts separately to medium fine mixtures. Then mix together along with the melted butter. Mix well.
Form the mixture into small balls. Spread coconut on a plate and roll the balls in the coconut until coated. The can be eaten straightaway or chilled before serving.
Substitute possibilities
Peanut butter or tahini for the melted butter
2 tablespoons honey for the raisins and double amount of coconut
½ teaspoon grated lemon rind
Toast coconut before rolling balls in it
Roll the balls in carob powder instead of coconut
